Olivier Le Calvez

Born in Mexico City in 1974 Study in Frances.  In 1992 come back to Mexico. Started in Amphytrion  Banquet house . At the same time he worked as a pastry chef at the Maxim’s The Paris at the Intercontinental Hotel Mexico city . 1994 he met Olivier Lombard at the Club Industriales a private club. Where Chef Lombard with Vatel club Mexico chef Association, and The French Culinary Academy Mexico and le s Maitre Cuisinier de Frances started a new program for young chefs ¨Cours D´Aprantisage Profesionel¨.  In 1996 he becomes member of Vatel Club Mexico chef association. Participated in different kind of festivals and events.  

After four years of strength study and graduated. 1999 became the Chef of Macaroni Grill Mexico. 2003 he was the Corporate Chef of  Beer Factory and Santa Fe Café. In 2004 he became the Director of  Kut Global Entertainment Services in Monterrey Nuevo leon at the Monterrey Arena first arena in Latin America. In 2004 went back to Mexico as Executive Sous-Chef of China Grill Mexico at the Camino Real Mexico. 2005 started as Executive chef of China Grill Mexico until now. In 2008 he was admitted as member of The French Culinary Academy, Athena Mexico et le Caraïbe. He was mentioned between the Top 10 chef of Mexico at the Buena mesa,  Reforma News Paper , Donde ir magazine,  Gourmet.com magazine, Universal News Paper, Chilango magazine. Olivier le Calvez   trained his sous-chef for the Bocuse d´or in 2006 and 2008 finish fifth and third placed representing China Grill. Participated with Televisa at Al Sabor Del Chef Tv program, Gourmet.com Tv program.  Olivier Le Calvez Executive Chef of China Grill Mexico. 2009 corporate chef mexico Modern Mexican restaurants with Richard Sandoval & Placido Domingo. 2010 Chef Director of Ituarte Catering house.  In 2011 Chef Olivier Join the The team of French chef at the Cordon Bleu Mexico culinary institute as chef Intructor  of Asian cuisine, fusion cuisine, Mexican and French cuisine. And in 2012 he became  the Chef & Manager of the new prestigious Hotel in Mexico city Live Aqua Bosques.
